3/4 cup ketchup, divided
1/4 cup minced fresh onion
1 Tbs. dried parsley
1 Tbs. brown sugar
1/4 tsp. salt
1/4 tsp. pepper
2 large egg whites
2 pounds Double R ground beef
1/2 cup quick cooking oats
non-stick spray
Preheat oven to 350 F.
Combine 1/2 cup ketchup, onion, parsley, brown sugar, salt, pepper, and egg whites in a large bowl. Stir well. Add meat and oats. Stir until just combined. Shape mixture into an 8 x 4 inch loaf on a broiler pan coated with non-stick spray. Brush remaining 1/4 cup ketchup over meatloaf. Bake at 350 for 1 hour and 10 minutes or until done. Let stand 10 minutes before slicing. Serves 6.
1 pound Double R ground beef
1/2 large sweet onion, chopped
1 tsp. chili powder
1/2 tsp. ground cumin
1 tsp. salt
1/2 tsp. pepper
2 cups diced tomato
28 ounces kidney beans
Cook ground beef and onion in a dutch oven (or other large pot) until beef is brown and onion has softened. Add spices and stir. Mix in tomatoes and beans. Allow to simmer for at least an hour to let the flavors blend.
Serve plain with crackers or top with cheese, sour cream, or more onions.
